Ditch the corned beef and pastrami in favor of a healthier (and, I might argue, tastier) version of this classic deli sandwich!
Spread the outside of both slices of bread with softened butter.
Place the first slice butter down on a griddle or skillet.
Top bread with Swiss cheese and coleslaw and then drizzle with dressing.
Place the remaining slice on top of the sandwich, butter side up.
Cook over medium heat until crispy and browned, then carefully flip over to cook the other side.
Serve with potato chips and a pickle!

Ooh! Both my sweetie and I are vegetarians and when he ate meat, a Reuben was one of his favorite things. I’ve been trying to find a veggie-twist on this. Can’t wait to try it!
