Description

Protein-packed lentils covered in the best, tangiest, sauciest sauce ever. You’ll want it in your belly ASAP!

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 whole Green Bell Pepper, Stem And Seeds Removed, Finely Chopped
  • 2 cloves Garlic, Minced
  • 1 whole Large Yellow Onion, Minced
  • 6 ounces, fluid Tomato Paste
  • 8 ounces, fluid Tomato Sauce
  • 2 cups Cooked Lentils
  • 1 leaf Bay Leaf
  • 1 Tablespoon Yellow Mustard
  • 2 teaspoons Apple Cider Vinegar
  • 2 teaspoons Light Brown Sugar
  • 1-½ teaspoon Chili Powder
  • ½ teaspoons Ground Black Pepper
  • ½ teaspoons Sea Salt
  • ¼ teaspoons Cayenne Pepper

Preparation

In a large saucepan heat olive oil over medium heat. Add bell pepper, garlic and onion and stir and cook until softened and translucent. Add tomato paste, stir it in and let it cook for 2 more minutes. Add the remaining ingredients. Heat to a boil over medium-high heat and cover with a lid then reduce heat to low and simmer for 30 minutes stirring occasionally. Make sure you remove bay leaf before serving. Enjoy!
