This dish is perfect for back to school weeknight dinners and is ready in a flash! Not to mention it’s super healthy!
Heat the oil in a nonstick skillet over medium heat. Add onion, bell pepper, carrot and tomato and cook until soft. Add turkey and cook until the turkey is crumbly and no longer pink, about 5 minutes.
Stir in ketchup, barbecue sauce, mustard, vinegar, celery seed, black pepper, and red pepper flakes. Reduce heat to low and simmer for 10 minutes, stirring occasionally. Remove from heat.
Serve turkey mixture on toasted hamburger buns. Garnish with pickle slices if desired.
