Description

A delicious dinner made from leftover Thanksgiving turkey.

Ingredients

  • 1 pound Ground Turkey, Or 3 Cups Leftover Thanksgiving Turkey
  • 3 cloves Garlic, Minced
  • 1 whole Onion, Chopped
  • 1 whole Pepper, Chopped
  • 1 teaspoon Garam Masala
  • 1 teaspoon Paprika
  • 1 teaspoon Cumin
  • ½ teaspoons Ginger
  • ½ teaspoons Curry
  • 1 teaspoon Coriander
  • 1 can (14.5 Oz. Can) Diced Tomatoes
  • 1 cup Chicken Or Turkey Broth
  • 10 ounces, weight Frozen Spinach Or 1 Bag Of Fresh
  • 1 cup Sour Cream
  • 6 ounces, weight Egg Noodles, Cooked

Preparation

If you’re using ground turkey, start out by browning it up, then adding in your garlic, onion, and pepper. Cook it for 3-4 minutes. If you’re using leftover cooked turkey, cook up the garlic, onion, and pepper in a tablespoon of oil for 3-4 minutes on medium heat and then add in the turkey.

Next you’ll add in your spices: the garam masala, paprika, cumin, ginger, curry and coriander. Add in your tomatoes and stir it all together.

Next up you’ll add in the stock and let it cook on medium heat for about 5 minutes.

Add in your spinach and give it a whirl or two until it heats up and wilts down into your meal.

Now stir in your cup of sour cream.

The final step is to add in your noodles.

Great!! I am so weird about leftover meats and have a hard time finding recipes that I like, especially for leftover turkey. This one was delish. I didn’t have any spinach, so I used peas.

Thanks for the recipe. I am always looking for interesting ways to use up leftover turkey. I made it tonight for dinner, and it was a hit. Super easy to make. I too added salt.

am enjoying this as I type. I love the idea of doing a curry with Thanksgiving turkey and this is a nice mild one. I did add salt though the recipe didn’t have it listed. It needed it.
