Description

I just so happened to top one of my tuna croquettes with some leftover homemade slaw and was overwhelmed with how well they go together. The fresh, cold crispness of the slaw combined with the crunchy to soft texture of the croquettes turn these simple elements into a fancy pair!

Ingredients

  • FOR THE SLAW:
  • 12 ounces, weight Rainbow Or Broccoli Salad (located In The Produce Section Of Most Grocery Stores)
  • ½ cups Mayonnaise
  • 2 Tablespoons Sugar
  • ½ teaspoons Paprika
  • ¼ teaspoons Garlic Salt

  • FOR THE CROQUETTES:
  • 2 cans Albacore Tuna (6 Oz Cans)
  • 2 Tablespoons Mayonnaise
  • 3 whole Large Eggs
  • 1 cup Plain Bread Crumbs
  • ½ cups Minced White Onion
  • 1 dash Garlic Powder
  • 1 dash Salt And Pepper
  • ½ cups Light Olive Oil

Preparation

To prepare the Rainbow Slaw:
Combine the 1/2 cup mayo, sugar, paprika, and garlic salt in a large bowl. Add the Rainbow, or Broccoli Slaw mix to the bowl and mix well until fully coated. Let refrigerate for at least an hour.

To prepare the Tuna Croquettes:
Drain the tuna and mash with a fork. Mix the tuna with the 2 Tablespoons of mayo, eggs, bread crumbs, white onion, garlic powder, and salt and pepper. You might find it easier to use your hands to do the mixing.

Preheat the light olive oil in a large frying pan and heat it up.

Using your hands, take a small (3-4 tablespoon) amount of the tuna mixture and make a patty, then place it in the oil. Repeat with the remainder of the tuna mixture. You should have about 16 or so patties. Fry until you have a golden brown crust on both sides (flipping once).

Remove to a plate covered with paper towels and allow to cool slightly.

Serve with a spoonful of the Rainbow Slaw on top. Enjoy!
