Family favorite! Easy, healthy and DEELISH!

Ingredients

  • 1 Can Refried Black Beans
  • 1 Bag Of Shredded Cabbage
  • 1 Small Bunch Of Cilantro
  • Rose's Lime Juice
  • 2 Avocados
  • 1 Container Fresh Pico De Gallo
  • 4 Tilapia Fillets
  • 1 Bag Of Orange/Red Tostados
  • 1 Bag Shredded Jack Cheese

Preparation

Heat up beans on stove and add a little olive oil and cheese to them after they are cooking.

Take the shredded cabbage and toss with chopped cilantro and lime juice. You don’t need much juice, just a little to add a little something to it. I usually put a tad salt and pepper with it. Stick that bowl in fridge.

Next, I take my 2 avocados and mash up and mix with the container of pico de gallo. I buy the HEB brand in the produce section. It’s a small container. Stick that bowl in fridge.

Now, season your fillets however you prefer. I usually just do a little salt and pepper. Saute them in a little olive oil until done. It usually takes me about 8 minutes each side.

While they fillets are cooking, start stacking your tostados.

Layer 1: Tostado
Layer 2: Black Beans
Layer 3: Avocado Mixture
Layer 4: Tilapia (I usually put about 1/2 of a fillet on each tostado)
Layer 5: Cilantro, cabbage
Layer 6: CHEESE! I usually just grab a handful and drop it on top.

Voila! Great family dinner, easy and no sides necessary! I’ve also served the beans on the side, instead of on the taco.
