Chicken legs are my favorite part of the chicken but I hate it when they’re overcooked. The chicken drumsticks you get with this recipe are tender and flavorful on the inside, and crispy and juicy on the outside – guaranteed to leave you licking your fingers clean.
1. Start by mixing the last 5 ingredients together in a bowl. Coat the drumsticks with the mix and keep in the refrigerator for 30 minutes to let the chicken marinate.
2. Fill a pot with water and bring to a boil, water should be high enough in the pot to cover the chicken. Add the onions, 4 garlic cloves and the drumsticks to the pot and reduce the heat. Add a Tablespoon of salt and let simmer while covered for 40 minutes.
3. Transfer everything to a baking pan, drizzle a little olive oil over the top and broil in the oven for 10-15 minutes or until chicken is browned but still soft. Serve with white rice – use the liquid left over in the pan to top the rice, it’s delicious.
