Description

This hamburger macaroni is everything I always thought it should be- flavorful, a little spicy, a little cheesy, hearty and satisfying made with faux meat or the real thing..

Ingredients

  • 1 pound Ground Beef Or Vegetarian Crumbles Equivalent
  • 1 pound Small Pasta (such As Elbow Macaroni Or Medium Shells)
  • 1 Tablespoon Oil (olive, Vegetable, And Canola All Work Fine)
  • ½ cups Onion, Diced (about 1/2 A Medium Onion)
  • 3 cloves Garlic, Minced
  • 1 can Roasted Tomatoes (14.5 Oz)
  • 2 Tablespoons Tomato Paste
  • 1 teaspoon Italian Seasoning Blend
  • 2 teaspoons Crushed Red Pepper
  • 1 dash Paprika
  • Salt And Pepper, To Taste
  • ¾ cups Shredded Sharp Cheddar Cheese (plus Extra For Topping, If Desired)

Preparation

If using ground beef, brown in a large skillet over medium-high heat. When it’s fully browned, drain and set aside.

Cook pasta according to the package directions and set aside.

Heat oil in the skillet. Add onion and cook until soft. Add garlic and cook about 1 minute, until fragrant. Add roasted tomatoes and tomato paste to pan. Stir to blend paste into the tomato liquid. Add Italian seasoning, crushed red pepper, paprika, and salt and pepper if desired. Stir to combine.

Mix cooked ground beef or vegetarian crumbles into tomato mixture. Cook until sauce thickens, about 10 minutes.

Mix in shredded cheese. Once cheese melts into the sauce combine it with the cooked pasta.

If desired, top with another ½ cup shredded cheese and transfer to oven just until cheese melts.
