Description

This comes from my amazing father-in-law Terry Nallenweg. Organic gardener, farmer and home cook, beer brewer and craftsman extraordanaire, the first time I met my future in-laws, they served this meal. Five years later, they still can’t get rid of me! While Terry is a man true to homemade ingredients, he has found nothing comes close to Sweet Baby Ray’s barbecue sauce!

Ingredients

  • 4 cans (12 Oz. Can) Beer Of Your Choosing, Or Enough To Cover The Chicken Completely
  • 2 bottles (18 Oz. Bottle) Sweet Baby Ray's Sweet And Spicy Barbecue Sauce
  • 4 pounds Bone-in Chicken

Preparation

Clean chicken and pat dry. Preheat your grill to medium heat. Transfer to chicken to a large, deep rectangular foil cooking pan and place on the grill. Cover chicken in beer, close grill and allow to simmer for about 35 minutes. After that time, remove the pan from the grill and transfer the chicken to a platter with tongs. Discard beer (don’t worry, you have more ice cold ones in the cooler). Baste the chicken in the sauce and don’t be shy. Kick up the heat to high on your grill and place chicken directly on the grates, getting a nice crispy char to the skin, turning when necessary. Add more sauce as necessary. Remove when the chicken is done or a meat thermometer ensures it is. This will be the moistest, most delicious barbecued chicken you have ever tasted!

Notes:

It is easier to control the heat for the first phase of cooking the chicken in beer on a gas grill; if you have charcoal, I definitely would recommend doing this portion in a 350-degree oven for the same amount of time.

You may not use this much barbecue sauce, but in the case of delicous barbecue sauce, too much is always better than too little for me!

If you are not a fan of the sauce, start the chicken in the beer, then you can add any of your favorite seasoning blends or sauces to the chicken. The beer process really just imparts great moistness and flavor into the chicken!

Delicious! I cooked mine entirely in the oven, 4 pounds of bone-in thighs, and they were completely gone in 15 minutes after four teenagers were fed!

WOW. Just, wow. I am an expert at dried out chicken breasts, but I am tenacious so I keep trying. I made this with one large bone-in chicken breast and two thighs for two of us. Unbelievably juicy and tender!! I marinated it in the beer for an hour first, and used my preferred bbq sauce. I was not confident because it felt like it would just be boiled chicken. And it was, after 35 minutes. But beer boiled! Crazy good.

Yum!!! Made this for dinner tonight and it was terrific! My husband couldn’t get enough; next time I’ll have to make double so there’s leftovers.
