Description

The best meatloaf ever.

Ingredients

  • FOR THE MEATLOAF:
  • 2 pounds Lean Ground Beef Or Half Each Of Ground Beef And Ground Pork Or Veal
  • ½ cups Quick Cooking Oats
  • ½ cups Onions, Minced
  • ½ cups Diced Green Peppers, Optional
  • 2 Tablespoons Fresh Parsley, Minced
  • 2 Tablespoons Prepared Mustard
  • 2 teaspoons Salt
  • 2 teaspoons Ground Pepper
  • 1 teaspoon Marjoram Leaves (optional)
  • 2 whole Eggs, Beaten
  • ½ cups Milk
  • FOR THE PIQUANT SAUCE:
  • 3 Tablespoons Brown Sugar
  • ¼ cups Ketchup
  • 1 teaspoon Prepared Mustard
  • ¼ teaspoons Fresh Ground Nutmeg

Preparation

Preheat oven to 350 F.

Combine ground beef, oats, onions, green peppers, parsley, mustard, salt, pepper, marjoram, eggs, and milk in a large bowl. I sauté the onions and green peppers in a small amount of oil until soft and allow to cool slightly before adding the the rest of the ingredients, but that is your choice. Mix lightly but well, and do not over mix. Press mixture into a 9 x 5 x 3 loaf pan.

Mix brown sugar, ketchup, mustard, and nutmeg in a bowl until smooth. Pour the Piquant sauce over the meatloaf and bake for 70 minutes.

Remove from oven. Let the meatloaf rest for 10-15 minutes before removing it from the pan and slicing.
