This sandwich is the perfect and a semi healthy lunch. Yah I know prosciutto isn’t really healthy but we can just pretend.
Melt butter in a well heated skillet. Carefully crack egg into the skillet. Cook until egg whites are glossy and the yolk is still runny. Sprinkle the egg with salt and pepper.
Next, toast bread in toaster. Place the egg on the bottom slice of bread and carefully top with prosciutto slices. Layer the tomato slices and top with fresh arugula. Place the top slice of bread on the sandwich.
