The Best Apricot Chicken

Description

This is a tasty meal that my entire family loves. It works well for dinner gatherings too!

Ingredients

  • 8 whole Chicken Breasts
  • ½ cups Unbleached Flour
  • 2 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • ½ cups Apricot Preserves
  • 1 Tablespoon Mustard
  • ½ cups Nonfat Plain Yogurt
  • 2 Tablespoons Slivered Almonds, Lightly Toasted (almonds Optional- I Leave Them Off)

Preparation

Sprinkle/coat the chicken with the flour.

Brown the chicken over medium-high heat. Melt the butter in the pan and pour olive oil in before placing the chicken breasts in to brown. All you need to do is brown it on both sides (it will cook more in the oven).

Place in a casserole dish, cover the chicken with aluminum foil and bake for 25 minutes at 375 degrees.

While the chicken is baking, combine apricot preserves, mustard, and yogurt.

When the chicken is finished, remove from the oven and pour the apricot mixture over the chicken and bake for 30 minutes more. (You can leave the alumnium foil on or take it off for the second round of baking- whichever you prefer!)

Once the chicken has baked for 30 minutes, remove it from the oven and sprinkle with almonds if desired.

This was very good!! I did not cover with foil for the second half of baking, and I used the sauce that was left in the dish as “dipping sauce”. I will make this again, thanks!
