Description

Another sweet and savory recipe with a bit of a kick, sure to be a crowd pleaser every time!

Ingredients

  • 1 whole Homemade Or Store Bought Pizza Crust (Large)
  • 10 ounces, weight Boneless Skinless Chicken Breast (Or Whole Rotisserie Chicken Or 4 Wings And Thighs On The Bone)
  • ½ cups Barbecue Sauce
  • ½ cups Thai Peanut Sauce
  • ¼ cups Sriracha
  • ¼ cups Finely Chopped Peanuts
  • ¾ cups Gouda Cheese, Shredded
  • ¾ cups Fontina Cheese, Shredded
  • ¾ cups Mozzarella Cheese, Shredded
  • ½ bulbs Red Onion, Sliced Into Thin Rings
  • 4 sprigs Green Onion, Chopped
  • 2 whole Carrots, julienned
  • ¼ bunches Cilantro, Chopped
  • 2 Tablespoons Vegetable Oil Or Egg Wash

Preparation

1) Preheat oven to 400F.

2) Grill chicken breasts and cut into cubes … or boil legs/thighs and shred … or shred meat off store-bought rotisserie.

3) Mix BBQ sauce, Thai peanut sauce, sriracha sauce, and chopped peanuts. Spread 1/2 of the sauce mixture on the pizza dough.

4) Toss cooked shredded/cubed chicken in the remaining sauce.

5) Layer 1/2 of the cheese on top of sauced pizza dough. Then layer chicken, red onion, green onion, carrots, and cilantro. Layer the rest of the cheese on top.

6) Brush the crust with vegetable oil, or egg wash.

7) Place in the oven and bake for 6-10 minutes, until crust is brown and cheese is melted.

A word of caution: if you don’t like food overly spicy, be careful with the sriracha (I used 1/2 the amount and we could still taste the ‘burn’.)

Just tried this and loved it! Thanks so much for posting. We grilled pizzas and this was like comfort food pizza for me. I liked the crunch of the carrots and the blend of peanut and bbq.
