Description

In just 15 minutes, you can whip up this delicious creamy tomato and mascarpone sauce, which is so simple to make but would be a hit at any dinner party.

Ingredients

  • 3-⅝ ounces, weight Tagliatelle
  • 1 Tablespoon Sunflower Oil
  • 2 cloves Garlic
  • 3 whole Tomatoes (large), Finely Diced
  • 1 Tablespoon Tomato Puree
  • 1 teaspoon Caster Sugar
  • 3-⅝ ounces, weight Mascarpone Cheese
  • 2 Tablespoons Fresh Parsley Or Basil, Chopped
  • Salt And Pepper

Preparation

Boil the pasta according to the instructions on the package.

In a large frying pan, heat the oil and over a medium heat, soften the garlic. After a couple of minutes, add the tomatoes, tomato puree and sugar, and leave to stew over medium-low heat for 10 minutes.

Add the mascarpone and stir until it has melted into the sauce. Add the parsley or basil and season to taste with salt and pepper.

When it is ready, drain the pasta and add it to the pan with the sauce. Mix well and then serve.
