Description

A super quick throw together meal that is not only incredibly pleasing to eat but very nutritious as well.

Ingredients

  • 12 ounces, weight Swiss Chard, Thick Lower Stems Removed
  • 1-½ Tablespoon Oil, Lard Or Bacon Drippings
  • 1 whole Onion, Thinly Sliced
  • 3 cloves Garlic, Finely Minced
  • 1 teaspoon Red Pepper Flakes, More Or Less Depending On Heat Preference
  • ½ cups Chicken Or Vegetable Broth Or Water
  • ½ teaspoons Salt
  • 12 whole Corn Tortillas, Warm
  • 1 cup Queso Fresco, Or Other Fresh Cheese Such As Feta Or Goat Cheese
  • ¾ cups Salsa, Your Favorite

Preparation

Slice the chard into 1/2-inch ribbons. Heat the oil in a large skillet over medium-high heat. Add the onion then cook until golden brown, about 4-5 minutes. To the onions, add the red pepper flakes and garlic. Stir for about 20 seconds until you are hit with the aroma of the garlic, then immediately add the broth or water, 1/2 teaspoon salt and the greens. Adjust the heat to medium-low then cover the skillet. Cook until the greens are almost tender. For Swiss chard this will be about 5 minutes. Spinach only takes about 2 minutes.

Uncover the pan, adjust the heat to medium-high, then cook until the juices have reduced significantly and merely glaze the greens. Taste and add salt if you think it needs it.

Serve with the corn tortillas, crumbled fresh cheese and salsa.

My brother-in-law sent me some swiss chard from his garden and I didn’t know what to do with it! My husband loves corn tortillas, so when I found this recipe I knew I had to try it. I skipped the red pepper flakes and salsa and served this with Southern Fried pork chops. It was fun, easy, and really delicious.

I made these over the weekend and loved them! I didn’t have 12 ounces of chard though (had gotten it as part of a co-op) so I just used what I had while keeping the other ingredients the same. I also added some grilled chicken for protein. A great way for people who don’t like greens to eat them!
