Description

This is an excellent light summery meal. It’s so fresh and easy to make.

Ingredients

  • 1 pound (about 18) Large Shrimp
  • Zest Of 1 Lemon
  • Zest Of 1 Lime
  • 2 Tablespoons Olive Oil
  • ½ teaspoons Kosher Salt
  • FOR THE SALSA:
  • 1-¾ cup Watermelon, Chopped And Seeded
  • 2 whole Scallions, Chopped
  • 2 Tablespoons Freshly Squeezed Lime Juice
  • 2 whole Small Garlic Cloves, Minced
  • ½ Tablespoons Kosher Salt
  • 1 whole Jalapeno, Seeded And Diced

Preparation

To prepare the shrimp:

Peel and devein the shrimp, if necessary. In a medium mixing bowl, stir together the citrus zests, olive oil, and salt. Add the shrimp and toss until evenly coated. Cover and refrigerate while you prepare the salsa.

To prepare the salsa:

Combine all of the ingredients for the salsa and set aside.

To grill the shrimp:

Heat the grill to medium-high. Grill the shrimp for 3 minutes on each side, or till opaque and firm.

*Be sure to buy shrimp that are large enough to sit on the grill rack without falling through, or place them on skewers to grill them.
