Description

A tribute to my Grandma who passed away . . . And a tasty dinner recipe!

Ingredients

  • 1 whole Medium Onion
  • 2 whole Garlic Cloves
  • 1 Tablespoon Olive Oil
  • 5 ounces, weight Ground Beef
  • ½ cups To 3/4 Cup Cooked Rice
  • 8 ounces, weight Canned Tomatoes
  • 1-½ teaspoon Worcestershire Sauce
  • ⅛ teaspoons Garlic Powder
  • Salt And Pepper, to taste
  • ¼ teaspoons Italian Seasoning
  • 2 whole Medium Bell Peppers
  • 2 Tablespoons Cheddar Cheese

Preparation

Preheat oven to 350 degrees F and lightly grease a baking sheet.

Chop 1 medium onion and 2 garlic cloves.

In a medium skillet, heat oil over medium low heat; add onion then garlic and cook until they are just browned. Add ground beef and cook until meat is browned all the way through. Drain grease if necessary.

In a medium bowl, mix ground beef mixture, cooked rice, canned tomatoes, Worcestershire sauce and seasonings together.

Cut tops off peppers and discard the tops. (Or give to your doggies). Clear out seeds.

Stuff the filling mixture into the peppers until they are full, but not overly stuffed. (You don’t want stuff spilling onto the pan while they cook!) Place peppers into a baking dish.

Bake for 35 minutes. Then add 1 tablespoon of cheese to each pepper and bake for an addition 3-4 minutes, or until cheese is melted and bubbly.

Delicious! I’m a vegetarian so I used soy sausage crumbles and it worked out fine. My previous attempts with stuffed peppers have left me with a pepper not cooked all the way through, but this one was perfect.

Very yummy recipe, but I think next time I will add cheese to the ‘stuffing’ to bind it together a bit There is no such thing as too much cheese! :)
