Description

These chicken breasts are a hit every time I make them and preparation is quite easy! Few side dishes are ever needed because they’re so filling. And the honey drizzle gives them a hint of “sweet.” Enjoy!

Ingredients

  • 6 whole Chicken Breasts With Skin
  • 6 ounces, weight Cornbread Stuffing (1 Box)
  • 1 whole Medium-sized Zucchini (or 2 Small Ones)
  • 3 whole Apples
  • 1 cup Or More Grated Swiss Cheese, To Taste
  • Honey, To Drizzle Over The Chicken

Preparation

(The above amounts of zucchini, apples, and Swiss cheese are subject to taste. Use more or less depending on what you like!)

Preheat oven to 350 degrees.

1. Prepare cornbread stuffing as instructed on the box (or make it from scratch if you’re extra adventurous!).
2. Peel and dice apples and zuccini into small pieces.
3. Rinse chicken and pat dry.
4. Combine stuffing, zucchini, apples, and cheese, in a bowl and mix with hands.
5. Stuff a small handful of stuffing under the skin of each breast and place in a baking dish.
6. Arrange leftover stuffing around the chicken breasts.
7. Drizzle with honey.
8. Bake for 45 minutes to 1 hour. It may take longer or shorter depending on the size of chicken breasts. Be sure to drizzle with honey 2 to 3 more times while baking.

Note: you could really use any part of a chicken; I just prefer the breast.

I made this last night. I LOVED it. Hubby thought it was good and my daughter couldn’t understand why I’d ruin chicken and cornbread stuffing with apples and zucchini. LOL. There’s one in every crowd huh?
