Description

Very simple way to savour the freshness and sweetness of prawns. Minimalist style.

Ingredients

  • 3 Tablespoons Oil
  • 3 cloves Garlic, Minced
  • ½ pounds Large Prawns (1/2 Pound Is About 7-8, Shell And Tail And Head On)
  • 1 Tablespoon Mirin
  • 1 Tablespoon Fish Sauce, More To Taste
  • 1 pinch Ground Black Pepper
  • 2 sprigs Spring Onions, For Garnishing

Preparation

In a frying pan over medium heat, fry minced garlic in oil until garlic just turns golden brown. Remove fried garlic from the pan and reserve for garnishing.

In a heat-safe bowl, place prawns in a single layer if possible. Pour the mirin, fish sauce, oil from the fried garlic and a pinch of pepper over the top. Place the bowl into the steamer.*

Steam on high heat for 5-6 minutes. Begin checking to see if shells have turned pink toward the end of the cook time. Prawns are done when there are no more translucent bits and the shells have turned pink. Do not overcook.

Garnish with fried garlic and chopped spring onion.

Dig in with your fingers. These are really good with some garlic chili dipping sauce.

*My steamer is one of those 2-tier kinds. The lower tier is just a pot with bubbling hot water. The upper tier has holes at the bottom to allow steam to rise. I place the bowl on the second tier for steaming. If yours comes with a basket, place the bowl in the basket.
