Description

Another one of my go to recipes that we just love. Easy and delicious!

Ingredients

  • 2 cups Canned Chickpeas, Drained And Rinsed
  • 1 can (19 Oz. Size) Diced Tomatoes
  • 2 whole Medium Potatoes, Peeled, Diced And Parboiled
  • 3 cups Baby Spinach
  • 5 cloves Garlic, Minced
  • 1-½ teaspoon Turmeric Powder
  • 1-½ teaspoon Curry Powder
  • 5 whole Cloves
  • 1 can (15 Oz. Can) Coconut Milk

Preparation

Mix together all of the above ingredients in a medium size pot, bring to boil over medium heat, reduce heat and simmer 30 minutes.

Serve over steamed jasmine rice. So yummy!

This was good.I also added peanuts after cooking to give it a little crunch. Next time I’d add more vegetables like green pepper and maybe some tofu!
