Description

Italian-style soup with pastina pasta, spinach and Italian sausage.

Ingredients

  • 1 pound Italian Sausage
  • 1 Tablespoon Olive Oil
  • 1 whole Small Onion, Diced
  • 2 cloves Garlic, Minced
  • 1 can (14 Oz. Size) Diced Tomatoes
  • 2 quarts Chicken Broth
  • 1 cup Spinach
  • 6 ounces, fluid Pastina Pasta (or Other Small Pasta)
  • Salt To Taste
  • Shaved Parmesan Cheese, For Topping (optional)

Preparation

In a large stock pot, brown sausage until no longer pink. Remove sausage with a slotted spoon and set aside. Add olive oil and cook chopped onion until translucent and soft. Add garlic and cook 1 minute.

Add diced tomatoes and chicken stock. Bring to a boil. Stir in spinach and pasta. Add salt if desired. Boil for 3 minutes.

Stir in sausage. Let simmer on low for about 20 minutes. Top with shaved Parmesan if desired.

DELICIOUS! I used poultry sausage, and I never would have known the difference from regular Italian sausage. And half the calories! I had some ancini de pepe pasta leftover from another recipe, and it’s similar to pastina, so I used that. I also cut back on the broth and added a whole 9 oz. bag of baby spinach. We like very chunky/hearty soups. This was so simple, but the flavors were out of this world! I’ll definitely be making it again… Thanks for sharing!
