A great versatile meal that can be made for breakfast or dinner!
Butter a casserole dish. Do one turn around a skillet with olive oil. Add mushrooms and onion, season with salt and pepper. Saute until tender. Remove and set aside. Do one more turn of oil around the pan. Add spinach and cook until wilted, about 2 minutes.
Start by layering 1/3 of the diced bread, then top with 1/3 of the spinach and mushroom and Swiss cheese. Repeat layers, ending with the bread. Mix beaten eggs and milk and pour over casserole. Cover tightly and refrigerate at least 2 hours if not overnight.
Cook at 350ºF covered for 40 minutes. Uncover and cook another 20 minutes or until golden brown.
Note: The great thing about the recipe is that it easily can be doubled or changed. You can add sausage, different veggies, cheeses—make it your own!
