Description

This is one of our favorite family meals to make. All the kids love it. It’s so light and perfect for a night when the kids have sports! My sons prefer white rice so my trick is a 50/50 split of white and brown; they didn’t even notice. Such a delicious meal and it’s done in the time it takes to make the rice!

Ingredients

  • 1 whole Lime, Juiced, Divided
  • 2 whole Mangoes, Peeled And Cubed
  • 2 Tablespoons Oil For Cooking
  • ½ whole Onion, Diced
  • 4 cloves Garlic, Minced
  • 1 whole Jalapeno, Diced (Remove Seeds For Less Heat)
  • 1 pound Shrimp, Peeled And Deveined
  • ¼ cups White Wine
  • 2 Tablespoons Soy Sauce
  • 4 dashes Hot Sauce, to taste
  • ½ bunches Chopped Cilantro

Preparation

In a medium sized bowl put half of the lime juice over the peeled and cubed mangoes and set aside.

Heat oil in a skillet until hot over medium-high. Add onion and saute until golden brown. Add garlic and jalapeno, cook until soft.

Place shrimp in the pan and turn when just barely pink. Add the white wine, soy sauce and hot sauce. Cook until shrimp are pink on both sides.

Add mango with juice, the remaining lime juice, and cilantro. Cook until heated, approximately 2–3 minutes.

This was really good. Next time I am gonna use more hotsauce and lime juice.
