I was missing Italy so I decided to make a tribute to the country with a fabulously light and spicy pasta dish!
Bring a pot of water to boil. Add a dash salt. Once water is boiling, pour ravioli in and cook until tender. Drain and set aside.
Heat olive oil and garlic in a medium sauce pan. Cook garlic cloves until lightly browned. Add canned spinach and tomatoes to the garlic. Sprinkle basil and red pepper over the mix. Heat on medium-low heat until warm. Add half of the Parmesan to the spinach. Take off heat and stir.
Pour spinach mixture over the ravioli and sprinkle with the remaining cheese. Enjoy!
