Description

Quick and easy to prepare, these cheesy, filling burritos are sure to become a family favorite. These are also friendly to your wallet as they require no meat!

Ingredients

  • 30 ounces, weight Re-fried Beans
  • 5 Tablespoons Tomato Paste
  • 2 Tablespoons Taco Seasoning
  • ¾ cups Water Or As Needed
  • 10  Flour Tortillas
  • 1 cup Shredded Cheddar Cheese
  • 2 Tablespoons Finely Minced Fresh Cilantro
  • 1 cup Shredded Monterey Jack Cheese

Preparation

Preheat oven to 400ºF.

Stir refried beans together in medium mixing bowl. Next, mix tomato paste with taco seasoning and as much water as you want to make a tomato sauce. The water will determine the consistency, so add more for a thinner tomato sauce and less for a thicker sauce. Now, place burritos on a work surface and top with re-fried beans, 1 tablespoon cheddar cheese, 1 1/2 tablespoons tomato sauce and a sprinkling of fresh cilantro. Roll, tuck and place on cookie sheet. Repeat for all burritos.

Spoon any leftover tomato sauce on top of burritos and sprinkle with Monterey Jack cheese. Bake for 10-15 minutes, until cheese is melted and burritos are slightly brown. Remove from oven and garnish with your favorite toppings.
