Description

Even folks who turn their noses up at Spam think this is really good. I add frozen spinach or broccoli florets to this sometimes, too!

Ingredients

  • 1 can Spam, Any Kind, 12 Ounce Can
  • ½ pounds Spaghetti Or Linguine Noodles
  • 4 stalks Green Onion, Cut In 1/2 Inch Pieces
  • 2 cloves Garlic, Crushed
  • 1 Tablespoon Oregano, Dried
  • ½ teaspoons Chili Flakes, Dried
  • 1 Tablespoon Basil, Dried
  • 1 can Diced Tomatoes (14oz)
  • 1 can Tomato Sauce, 14oz
  • 1 cup Pea And Carrot Mix, Frozen
  • Optional Garnish: Shredded Italian Cheese

Preparation

Boil salted water in a large pot, add pasta and cook to al dente (according to package instruction for al dente). Drain and set aside.

Dice Spam into 1/2 in cubes-fry over medium heat in large saute pan til crispy.

Add green onions, garlic, oregano, chili flakes and basil-saute for a few minutes til spices are fragrant.

Add tomatoes, tomato sauce and peas and carrots-bring to a low simmer and cook for about 15 minutes. Taste and adjust salt.

Add cooked pasta to pan-mix well and serve sprinkled with your favorite Italian cheese-enjoy!
