Description

A simple but delicious mix of black beans, ground turkey and a light and spicy tomato sauce.

Ingredients

  • 1 pound Spaghetti Noodles
  • 1 pound Ground Turkey
  • ¾ cups Olive Oil
  • ¼ cups Chopped Parsley
  • 2 cloves Garlic, Minced
  • 1 Tablespoon Red Pepper Flakes
  • 1 can (16 Oz Can) Black Beans, Rinsed And Drained
  • ½ cups Tomato Sauce
  • 1 Tablespoon Kosher Salt
  • ¼ cups Freshly Grated Parmesan Cheese

Preparation

Cook the spaghetti to al dente in a pot of salted boiling water as per the package directions.

While the pasta is cooking … Brown the ground turkey in a large non-stick pan over medium high heat, making sure to break the turkey meat into small pieces with a wooden spoon as you go. Once the turkey is cooked, remove it to a plate and set aside for a minute.

Add the olive oil to the pan and allow it to get hot (but not smoking). Then add the parsley and cook for about 30 seconds to a minute, until crispy but not browned. Add the garlic and red pepper flakes and cook for another 30 seconds, stirring constantly. Add in the cooked turkey meat, black beans, tomato sauce and salt. Stir and cook for about 2 minutes.

Toss the cooked pasta with the sauce and serve. Top each plate with a sprinkle of Parmesan cheese.
