Description

FRESH fast food at its best! After being on the road for four days, all I wanted when I finally arrived to the comfort of my own home was something healthy … and fast! So I boiled up a pot of gluten free spaghetti (my all-time favorite Schar is pictured above) and sliced up some tomatoes and mozzarella fresca. Easy, quick and delicious!

Ingredients

  • 1 package (12 Oz. Package) Gluten Free Spaghetti (I Use Schar)
  • 2 whole Large Ripe Tomatoes
  • 3 ounces, weight Sliced Mozzarella Fresca
  • 6 whole Fresh Basil Leaves, Rinsed And Chopped
  • 1 Tablespoon Extra Virgin Olive Oil
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper

Preparation

1. Boil pasta according to directions. Set aside.
2. Layer tomatoes and cheese around the outside of the plate.
3. Add spaghetti to the center.
4. Sprinkle with basil leaves.
5. Drizzle olive oil on top.
6. Sprinkle with salt and pepper to taste.

My very favorite gluten free spaghetti is by Schar (as pictured).
