My favorite go-to recipe that my “momma taught me.” A fantastic and easy pasta dish that is perfect for weeknight meals, but special enough to serve for guests.
This recipe is very easy, but it is all about timing, so try to stick with the steps as best you can.
1. Measure out all ingredients and separate the egg.
2. Cook pasta in salted water until al dente.
3. While the pasta cooks, cut bacon into 1/4-inch wide slices and cook in a medium sauce pan until crisp and golden.
4. Drain pasta and return pot to stove.
5. Immediately add egg white, bacon (plus reserved cooking grease), and drained pasta back to the pasta pot. Stir to combine. (The timing on this step is important because the hot grease and pasta will be used to cook the egg white.)
6. Add Parmesan, milk (or half-and-half) and pepper. Stir to combine and serve immediately.
Enjoy!
Healthy (or “less bad”) options:
– Substitute skim milk for the milk or half-and-half.
– Cook the bacon in the microwave with paper towels to catch the grease.
– Omit the egg white.
This still makes for a tasty dish, but I highly suggest the original if you can spare the calories! You only live once!
