Description

Shrimp and Girts is a cozy love-fest for seafood, bacon, corn and cheese with a bright pop from the lemon to balance the flavors. If you are exploring Southern cooking, this is the perfect place to start!

Ingredients

  • 4 cups Water
  • 1 cup Stone Ground Grits
  • ¾ teaspoons Salt
  • ¼ teaspoons Pepper
  • 3 Tablespoons Butter
  • 2 cups Fontina Cheese, Shredded
  • 3 dashes Cayenne Pepper
  • ½ pounds Bacon, Chopped
  • 1 pound Shrimp, Peeled And Deveined
  • 1 whole Small Bunch Green Onions, Chopped
  • 1 clove Garlic, Chopped
  • 3 Tablespoons Chopped Parsley
  • ½ whole Lemon, Juiced

Preparation

In a medium saucepan, bring the water to a boil. Add grits, salt and pepper. Whisk well to avoid clumping. Reduce heat to the lowest setting and cook until water is absorbed, 10–12 minutes. Remove from heat and stir in butter, cheese and 2–3 dashes of cayenne pepper. Cover until ready to serve.

Fry the bacon over medium-high heat in a large skillet. When crisp, remove bacon with a slotted spoon and place on a paper towel to drain.

Add shrimp and another dash of cayenne pepper to the bacon grease and sauté until pink, about 3 minutes. Immediately add onions, garlic, parsley and lemon juice. Toss and remove from the heat.

No need to salt the shrimp, since it cooks in the bacon grease.

Divide grits onto plates, top with the shrimp mixture and bacon. Serves 4.

Loved this! Making this dinner in Iowa, let us trick ourselves into thinking we were back in the wonderful south. Will definitely make again and again.

Sadly, this was my second try at grits and we still just don’t like them. I meant they don’t seem to taste like anything. My dad with his Arkansas roots would be so disappointed in me. These with the fontina were much, much better than the first time we tried. All of that said though, the shrimp part was fabulous! We will be making that part again and serving over rice or fettuccine!

This was amazing! Shrimp and grits is one of my favorite meals and this did not disappoint. I upped the fat by using two cups water and two cups heavy cream in the grits, but stuck to your recipe for the shrimp and the flavor was perfect. Thanks!
