Description

Creamy, cheesy enchiladas with the sharp flavor of green onion. Very quick and easy!

Ingredients

  • 12 whole Corn Tortillas
  • Canola Oil, For Frying
  • 1 can (20 Ounce) Enchilada Sauce
  • 2 cups Sour Cream
  • 3 cups Sharp Cheddar Cheese, Grated
  • 1 cup Sliced/chopped Green Onions
  • ½ teaspoons Ground Cumin
  • ¼ teaspoons Cayenne Pepper

Preparation

Preheat oven to 375 degrees.

Mix together sour cream, green onions 1 1/2 cups grated cheddar, cumin, and cayenne pepper.

Heat canola oil in a skillet over medium heat. Heat enchilada sauce in a separate skillet or saucepan.

Using tongs, fry tortillas one at a time, for only about five to ten seconds per side (don’t allow to crisp.) Remove from oil, then dunk tortilla in enchilada sauce. Lay tortilla on a plate, then spoon a good two or three tablespoons of the sour cream mixture in the middle. Roll tortilla, then place face down in a 9 x 13 inch baking pan. Repeat with remaining tortillas and sour cream mixture.

(If there’s any sour cream mixture left over, use it as a dip for tortilla chips!)

Cover the dish with the remaining cheese, then bake for 15 to 20 minutes until bubbly.

Serve immediately. Place a dollop of sour cream on each serving, then sprinkle on sliced green onions.

I love alot of your dishes they have layers of flavors, which adds so much depth to the palete.
The enchiladas were lacking in flavor, the cayenne did not help much, this recipe needs a kick in the pants. I loved the way you fried the tortillas and diped them in the enchilada sauce. I will try more of your recipes in the future, I am sure they will be great!!!!!!!!!

I had some leftover shredded chicken with taco seasoning (that I had made in the crockpot a few days ago) and added this to the sour cream mixture. Very easy AND yummy. I plan to make these again soon!

I’m always leery about trying new recipes when having guests over, but this one didn’t disappoint. my husband and his buddy, both meat-and-potatoes-guys, ate it right up. i did add some slices of grilled chicken though. would make again.

Awful …. no real flavor and not a nice texture. Would try again but it needs something like chicken in it to give it some substance and not just be a mushy mess. Sour cream seperated and did not meld nicely with the cheddar.

I love sour cream but had a hard time with these. Maybe it was the brand I used but the sour cream seperated when I cooked it.

This dish lacked flavor, I like layers of flavor which P.W. seems to pinpoint, but in this case, she missed the mark!
I will keep trying your recipes, because most of them are fantastic!!
