Description

If you like salmon and you like quesadillas, try this awesome combination of the two and take your tastebuds for a ride!

Ingredients

  • FOR THE CHIPOTLE SAUCE:
  • ½ cups Sour Cream
  • 2 Tablespoons Chipotle Peppers In Adobo Sauce, Minced
  • 2 Tablespoons Lime Juice
  • Salt And Pepper, to taste
  • FOR THE QUESADILLAS:
  • ¼ cups Cream Cheese
  • ½ cups Green Onion, Finely Chopped
  • ½ cups Crumbled Feta Cheese
  • 4 whole 8 Inch Flour Tortillas
  • 3-½ ounces, weight Smoked Salmon, Chopped
  • Butter To Grease Griddle
  • ½ teaspoons Chopped Fresh Cilantro, For Garnish (optional)

Preparation

1. In a small bowl, mix the ingredients for the chipotle sauce and set aside.

2. For the quesadillas, in a medium bowl, mix cream cheese, green onion, and feta cheese until blended. Completely spread over half of the tortillas. Add salmon and place the remaining tortillas on top.

3. Place the quesadillas on a greased griddle or pan and cook over medium heat for 1 to 2 minutes on each side until light brown and cheese has melted. Serve with the chipotle sauce and top with cilantro if desired.
