If you like salmon and you like quesadillas, try this awesome combination of the two and take your tastebuds for a ride!
1. In a small bowl, mix the ingredients for the chipotle sauce and set aside.
2. For the quesadillas, in a medium bowl, mix cream cheese, green onion, and feta cheese until blended. Completely spread over half of the tortillas. Add salmon and place the remaining tortillas on top.
3. Place the quesadillas on a greased griddle or pan and cook over medium heat for 1 to 2 minutes on each side until light brown and cheese has melted. Serve with the chipotle sauce and top with cilantro if desired.
