This incredibly easy recipe produces tasty pork chops that are super tender. I like to serve the pork chops and sauce as is with pasta, but you can also thicken up the sauce with some cornstarch and water.
1. Heat oil in a skillet over medium-high heat. Sprinkle pork chops with salt and pepper, and brown in oil, about 3 minutes on each side. Transfer chops to a slow cooker.
2. Add garlic, onion, and mushrooms to the pan and cook until vegetables are just slightly soft, about 2-3 minutes. Add vegetables to the slow cooker.
3. Pour wine into the pan and scrape up bits from the bottom of the pan. Pour into the slow cooker.
4. In a bowl, combine tomato sauce, lemon juice, and seasonings. Pour over the chops and vegetables in the slow cooker.
5. Cover and cook on low for 6-8 hours, or until chops are cooked through. Serve with pasta.

I joined just so I could review this – it was DELICIOUS! The pork chops were so tender. My husband took one bite and said it was a keeper. I admit I had to change it a bit based on what was in the cupboard: I used six chops that were still partially frozen when they went in the slow cooker, and diced tomatoes since I didn’t have sauce. One can of tomatoes had basil, oregano, and garlic in it, and the other had balsamic vinegar, basil, and olive oil. Then I added one can of tomato paste to thicken it up a bit. I also doubled the spices b/c I read it wrong, but it was still fabulous. Definitely a keeper!

I made this and it was delicious! It smelled good from the moment I started the crock pot! WOW! Absolutely delicious!
