Description

Tender chicken smothered with rich tomato sauce and lots of mozzarella cheese. What’s not too love?

Ingredients

  • 2 Tablespoons Lightly Salted Butter
  • 2 Tablespoons Extra Virgin Olive Oil
  • 2 whole (8 Oz. Size) Boneless, Skinless Chicken Breasts
  • 1 whole Small Onion, Sliced Thinly
  • ½ teaspoons Black Pepper
  • 1 jar (24 Oz. Size) Tomato Sauce (Your Favorite Brand Or Homemade Sauce)
  • 1 package (16 Oz. Size) Shredded Mozzarella Cheese
  • ½ teaspoons Fresh Chopped Basil (to Garnish)
  • Parmesan Shavings For Garnish, If Desired
  • Pecorino Grated Cheese As Optional Garnish

Preparation

Preheat oven to 375 F.

In a large oven-safe skillet (use one with a lid—you’ll need it later) on medium heat, melt the butter and oil together. Then add chicken breasts, onions and black pepper and cook for 6-7 minutes on each side of the chicken breasts. Onions will be browning and tender by that time. Add tomato sauce and reduce heat to a simmer for a few minutes to warm the sauce and finish cooking everything through. Shut off the heat.

Cover skillet and place in the oven. Bake for 20 minutes at 375 F. After the 20 minutes remove skillet carefully from oven. Remove the lid and add mozzarella cheese over the top. Return skillet to the oven (uncovered), reduce oven temperature to 350 F and bake for an additional 15 minutes. Remove skillet from oven and garnish with fresh chopped basil. Then add an optional garnish of Parmesan shavings or grated Pecorino cheese.

You can serve this with your favorite pasta, or a side salad and bread sticks, if you like.
