Description

Iron-rich liver swimming in seasoned onions—an easy and healthy main course.

Ingredients

  • ½ cups All-purpose Flour
  • ¼ teaspoons Salt
  • ¼ teaspoons Black Pepper
  • ¼ teaspoons Cumin
  • 1 pound Baby Calf's Liver, Sliced Thinly (I Have My Meat Market Slice This Into Two 1/2-inch Thick Pieces)
  • 2 Tablespoons Sweet Cream Butter
  • 2 whole Large White Onions, Sliced Finely
  • ½ cups Low Sodium Beef Stock
  • ¼ cups Light Cream

Preparation

Preheat oven to 350ºF.

In a large plate, add flour, salt, black pepper, cumin, and mix together with a fork. Add the slices of calves liver and coat both sides well.

In a large 12″ cast iron skillet, add butter and sliced onions. Sauté onions until tender Add beef stock and heavy cream and stir together. Add liver and place in oven at 350ºF for 20 minutes, uncovered.

I love to serve this with homemade mashed potatoes and fresh peas! Delicious and nutritious. Enjoy!
