Description

October is soup and cider month at Carolina HeartStrings and to start out our recipes, I wanted to make my Simple Crockpot Soup. So easy and so filling.

Ingredients

  • 2 cups Red Potatoes, Cubed (leave Skins On)
  • 2 cans (15 Oz. Size) Black Beans, Rinsed And Drained
  • 2 cans (14 Oz. Size) Diced Tomatoes With Green Chiles, Undrained
  • 1 can Corn (approximately 12 Ounces), Drained
  • 1-½ cup Water
  • 2 cups Salsa

Preparation

Combine all the ingredients in a crockpot. Cover and cook 6 hours on low. Makes 8 servings. If you like it hot, add some hot sauce to taste!

I’m so glad you put up this simple recipe. I used it as a jumping off point. I browned a pound of hamburger and added all the other ingredients on top in the crock pot. Used one can of diced tomatoes with jalapeno, and one can of plain diced tomatoes instead of the green chile ones, and chicken stock instead of water, and used medium salsa. Garnished with a little grated cheese and a dollop of sour cream. Very delicious!
