Description

This is my basic chili recipe that is easy to make and easy to eat. My family loves this dish. Serve with whatever toppings you like!

Ingredients

  • 3 Tablespoons Olive Oil
  • 1 whole Small Onion, Diced
  • 2 cloves Garlic, Minced
  • 2 whole Carrots, Diced
  • 2 stalks Celery, Diced
  • ½ pounds Ground Beef (93% Lean)
  • 1 cup Beef Stock
  • 1 can Diced Tomatoes, 14.5 Oz
  • 1 can Tomato Sauce, 15 Oz
  • 1 can Black Beans, Rinsed And Drained (15 Oz.)
  • 1 can Pinto Beans, Rinsed And Drained (15 Oz.)
  • 1-¼ cup Frozen Sweet Corn
  • 4 dashes Salt And Pepper, to taste
  • 1 Tablespoon Cumin
  • 1 Tablespoon Chili Powder (or More If You Like It Hot)
  • Optional Toppings: Avocados, Sour Cream, Cilantro, Cheese, Etc)

Preparation

In large pot, heat oil over medium heat. Saute onions, garlic, carrots and celery until slightly softened, 5 minutes. Drop meat into pot and break apart using a wooden spoon. Cook until meat is cooked thoroughly and browned. Stir in the remaining ingredients and bring to boil. Reduce heat to low and simmer at least 20 minutes but up to 3 hours.

Top with desired ingredients (fresh tomatoes, avocados, lime juice, sour cream, cilantro, cheddar cheese, etc.) and serve with cornbread.

It was great. I did change things. I didn’t add the celery or carrot. I do not like those in chili. I also only added one can of beans which where White beans. I added a can of crushed tomatoes and one can of tomatoes with basil and oregano in it. It was really good. Thanks again for the recipe. :)

Great recipe! Very easy and delicious. I added extra chili powder and cumin to spice it up….plus more veggies on occasion. So wonderful on a cold night…;)

Made it last night! It was great, we used a pound of ground turkey in it and I am sure we will make it again!

I cannot wait to try this…come on Florida cool down already so I don’t die of a heat stroke when making this! And I too love the idea of using black beans, thanks for sharing :)

Delicious recipe! I made it tonight for the Grandparents and family and they loved it! Almost everyone ate two big servings.

This was a great chili! Loved all the vegetables, the flavor was great and we had tons of left overs. I had to add more beef stock when i was reheating the left overs the next night. Thanks for a great recipe!

The ingredients in this chili are fantastic but according to the recipe it was a little light on flavor for our tastes. That said, I just added more spices and it was a huge hit! I made it in the crockpot, on low all day. Recipe served 8 with left-overs. I will be repeating this one!

My husband LOVED this (I did too). It is now my ‘go to’ recipe for chili.
I did add some shredded zucchini. I also browned the meat and just tossed everything in the crockpot. It cooked on low all day.
