Description

This quick and easy baked fish is a big hit around our house. It only takes about 15 minutes to bake. When you are running late with dinner, it can be a life saver!

Ingredients

  • 2 whole Salmon Fillets (1-serving Size Each)
  • ¼ cups Lemon Or Lime Juice
  • ½ cups Italian Dressing
  • ¼ cups Bacon Bits ( I Use The Real Bacon)
  • ¼ cups Grated Parmesan Cheese
  • Canola Oil Cooking Spray

Preparation

I spray my dish with canola oil before putting any ingredients in. I find that olive oil burns too quickly in a hot oven. Use a dish that is big enough to fit both salmon fillets into in a single layer. Preheat oven to 400 F.

Lay out 2 salmon fillets in your pan or dish. I buy frozen fish in a bag that is individually wrapped, but this works for fresh also. Sprinkle lemon or lime juice over the fish. Pour Italian dressing over the juice and fish. Next, sprinkle the bacon bits over everything and sprinkle a little Parmesan to finish up.

Bake at 400 F for about 15-20 minutes depending on how thick the fish is. It will flake easily when done. Remove from oven. Sprinkling a little more cheese on after it comes out of the oven is optional. If you are using more than 4 fish fillets, I would extend the baking time by about 5 or 6 minutes.

Note: Sometimes I add sliced olives to this for an extra hit of flavor. Use what’s on hand and be creative!
