Seriously delicious pizza!
Preheat the oven to 450 F.
Drizzle a pan with olive oil and stretch the dough out on it. Drizzle (or brush) about a teaspoon of olive oil over the top of the dough, then sprinkle lightly with salt. Set aside while you prepare the rest of the ingredients.
To prepare the sauce, first put all of the following into a heavy skillet: 1 1/2 cup diced tomatoes, 1 tablespoon butter, 1 teaspoon olive oil, and 1/2 cup diced mushrooms. Turn the heat on to medium-high, and give it a stir, then add the dried oregano and basil. Bring to a boil, then turn the heat down to medium-low and simmer for 5 minutes or so, stirring constantly.
After five minutes, you should have a nice thick base. If you don’t, continue to cook for another minute or two, until thickened. Add in the cream and cook over medium-low heat until thickened (about 5 to 7 minutes), and season with salt and pepper to taste. Remove pan from heat.
Spread the sauce over the dough and add the sliced mozzarella. Bake for 10 to 12 minutes, until the crust is cooked through, browned on the bottom, and the cheese is melted.
While the pizza is cooking, prepare the shrimp: Dice the garlic. Heat 1 tablespoon each of butter and olive oil over medium heat. Once the butter is melted add the garlic. Saute the garlic for a minute or two (just until it’s starting to turn color). Then add the shrimp and lemon juice.
Cook, stirring frequently, until the shrimp turn pink and are cooked through. This takes only 3 or 4 minutes depending on the size of the shrimp. Remove pan from heat.
Top the (cooked) pizza with the shrimp, drizzle all of the butter/lemon/garlic sauce from the pan over the top evenly, and sprinkle with freshly chopped parsley.
