Description

Sheet Pan Tuscan Baked Salmon and Veggies is an easy, Mediterranean-inspired dinner recipe. Quick to prep and ready in under 30 minutes, this is the perfect meal for busy family weeknights.

Ingredients

  • FOR THE SALMON:
  • ¼ cups Tomato Paste
  • 2 Tablespoons Olive Oil
  • 1 teaspoon Mustard
  • 1 Tablespoon Dried Italian Herbs
  • 1 teaspoon Ground Paprika
  • ½ teaspoons Salt
  • 1-½ pound Salmon Fillet
  • FOR THE VEGETABLES:
  • 2  Large Red Peppers, Sliced
  • 2  Large Zucchini, Sliced
  • 1 Tablespoon Dried Italian Herbs
  • 1 Tablespoon Olive Oil
  • Salt And Pepper, to taste
  • ½ pounds Cherry Tomatoes

Preparation

Heat oven to 400°F. Line a sheet pan with baking parchment.

Stir tomato paste, olive oil, mustard, and seasonings in a small bowl. Place the salmon fillet in the middle of a sheet pan and spread everything over it.

Place the peppers and zucchini in a large bowl and toss with dried Italian herbs, olive oil, salt and pepper. Place around the salmon. Arrange the cherry tomatoes on top and bake for 15–20 minutes, or until salmon flakes easily.

Loved this! I followed the recipe exactly (except I used a sweet mustard which tasted really good.) My first sheet pan dinner and I will definitely make it again.
