This recipe makes for a super-quick dinner! Also, it can be served warm, cold, hot, at room temperature, or any other temperature (if there is any other).
Cook the noodles al dente according to the package instructions.Drain well and transfer to a large bowl.
For the sauce, whisk together the peanut butter, water, soy sauce, sesame oil, and rice vinegar in a small bowl. Add the sauce to the noodles and mix to combine. Then add in the carrots and green onions and mix together. Garnish with sesame seeds and peanuts (optional) and serve at any temperature.
