Description

A quick and easy Asian-inspired noodle bowl, perfect for a weeknight meal. Use pre-cooked chicken and your meal will be ready in under 20 minutes!

Ingredients

  • ½ cups Rice Vinegar
  • 3 whole Green Onions, Sliced
  • 2 Tablespoons Honey
  • 1 Tablespoon Soy Sauce
  • 1 teaspoon Ginger Paste
  • 3 teaspoons Chili Garlic Sauce (more Or Less To Taste)
  • 9 ounces, weight Chopped Cooked Chicken
  • 12 ounces, weight Udon Noodles
  • 2 teaspoons Sesame Oil
  • 1  Yellow Bell Pepper, Stem And Seeds Removed, Sliced
  • 1  Orange Bell Pepper, Stem And Seeds Removed, Sliced
  • 2 Tablespoons Cilantro (fresh, Chopped)
  • ½ cups Peanuts, Crushed

Preparation

1. In a small bowl stir together vinegar, green onions, honey, soy sauce, ginger paste and chili garlic sauce. Put the chopped cooked chicken in a medium sized bowl. Pour the sauce over the chicken. Set aside.
2. Cook noodles according to package instructions. Drain them in a colander. Heat the oil in the empty noodle pot over low heat then add the noodles.
3. Add chicken mixture into the noodles, stir in sliced peppers and cilantro. Cook for just 1-2 minutes, allowing the flavors to meld together. Serve in bowls and top each with the peanuts.
