Sweet onions paired with the spicy kick of cayenne give this Sausage and Kale Rice Bowl a unique flavor balance.
In a medium bowl, add warm cooked brown rice.
In a large skillet, heat 1 teaspoon olive oil over medium heat and spread around the pan. Add sausage and cook for 3–4 minutes on each side, turning once, until browned. Add the onions and garlic and cook for 2–3 more minutes, stirring occasionally.
Remove from heat and add the onion/sausage mix to the rice.
In the same skillet over medium heat, add the chopped kale and remaining ½ teaspoon olive oil. Stir and cook for 2 minutes, or until kale starts to wilt. Remove from heat and add the kale to the brown rice mixture. Then add all seasonings and stir until combined.
Makes about 2 cups.
