Description

The wonderful combination of tomato, potato, and spicy sausage makes for a warm, filling meal.

Ingredients

  • 3 whole Potatoes
  • 3 Tablespoons Vegetable Oil
  • ¼ teaspoons Salt
  • ½ teaspoons Black Pepper
  • ½ teaspoons Minced Garlic
  • 1 pound Hot Italian Sausage Links
  • 1 whole Onion, Sliced
  • 12 ounces, fluid Pasta Sauce
  • ¼ cups Grated Parmesan Cheese

Preparation

Preheat oven to 400ºF.

Cut the potatoes into small bite-size pieces. Pour oil into a 9 inch x 13 inch baking dish and toss potatoes in oil. Sprinkle salt, pepper, and minced garlic over the potatoes and bake for 15 minutes. Stir potatoes and then bake for another 10 minutes.

Slice sausage links into bite-size pieces (this may be easier if the links are partially frozen). Cook the onion and sausage on the stove until browned.

Combine the sausage and onion with the potatoes after they have baked for 25 minutes. Add the pasta sauce and Parmesan cheese. Stir well and return to the oven for another 10 minutes or until potatoes are thoroughly cooked.

I’ve made this twice more since I reviewed it and it’s still a big hit! I wish I could make everyone try it, it’s the best and so simple and cheap! I’m going to make it again next weekend when we have a bunch of people over for football. Thanks again for the wonderful recipe, Jonathan!

This is AMAZING! Thank you for sharing this recipe! My whole family (including two toddlers) absolutely loved it. Everyone had seconds; this is definitely a new family favorite. I did use sweet Italian sausage rather than hot (little kids) but either way I know I would have loved it. It’s a great alternative to pasta and I’ll probably be making this at least a couple times a month, it’s so delicious and easy! Thank you for sharing!
