Description

This delicious recipe is simple, healthy, and perfect for the upcoming summer days.

Ingredients

  • 1 pound Salmon
  • Salt And Pepper
  • Olive Oil, As Needed
  • 1  Lemon, Sliced
  • 2  Eggs
  • ¼ cups Chives
  • 1 teaspoon Fresh Chopped Garlic
  • 1 cup Panko
  • FOR THE ALMOND PESTO:
  • ½ cups Almonds
  • 1 cup Basil
  • ¼ cups Olive Oil
  • ¼ cups Parmesan Cheese

Preparation

Preheat oven to 350ºF. Using foil in a Pyrex dish, prepare salmon with generous salt and pepper, olive oil and lemon slices. Place in oven for 30 minutes. Given that it will be grilled and put back in the oven, this time ensures that the salmon will not be too dry.

While baking, prepare pesto using almonds, basil, olive oil and Parmesan cheese. Place all items in a food processor and chop until smooth. Set aside.

In a large mixing bowl, add eggs, chives, garlic and panko. Stir. Once salmon is cool enough to start mixing, shred using a fork and add to the mixture. Using your hands, form mixture into large patties.

In a large skillet, cook patties for 2 minutes on each side. Transfer patties to a greased baking sheet. Place back in oven for 5–8 minutes to avoid drying out the salmon. Enjoy!
