Description

Easy weekday supper on the table in 20 minutes.

Ingredients

  • FOR THE BASIL MAYONNAISE:
  • 4 Tablespoons Light Mayonnaise
  • 1 Tablespoon Lemon Juice
  • 1 pinch Dried Basil
  • FOR THE BURGERS:
  • 32 ounces, weight Canned Salmon, Drained And Gently Mashed
  • 3 whole Eggs, Beaten
  • ¼ cups Fresh Parsley
  • 4 Tablespoons Finely Chopped Onion
  • ½ cups Fine Bread Crumbs
  • ½ teaspoons Oregano
  • ½ teaspoons Thyme
  • ½ teaspoons Basil
  • 1 pinch Red Pepper Flakes
  • Salt And Pepper, to taste
  • 2 Tablespoons Vegetable Oil, For Frying
  • FOR ASSEMBLING THE BURGERS:
  • 6 whole Sesame Hamburger Buns
  • Lettuce Leaves
  • Tomatoes, Optional

Preparation

For the basil mayonnaise:
In a small bowl mix the mayo, lemon juice and basil together and set aside.

For the burgers:
In a large bowl combine all the burger ingredients excluding the vegetable oil (which is used for frying). Form into 6 thick firm burgers.

In a large skillet or grill pan over medium heat, add the vegetable oil. When hot, add the patties and cook for 4 minutes each side or until nicely browned. Cook in batches if necessary so as not to overcrowd, using 1 tablespoon of oil at a time.

To assemble the burgers, spread some of the mayo on each bun and top with a patty, followed by lettuce and tomato, if using.

My husband will eat almost anything. Ok, that isn’t bad but as a result I end up not knowing what is considered good. I used this recipe the other day and he went NUTS. Everybody he sees now gets the low-down on the excellent meal I put on the table! I cut way back on the amount since its just the 2 of us and I didn’t serve them as burgers, just patties. What a winner you’ve given me! Thanks.
