Description

A filling, yet healthy pasta dish for salmon lovers and the lovers of salmon lovers.

Ingredients

  • FOR THE SALMON:
  • 8 ounces, weight Skinless Salmon
  • 1 Tablespoon Crushed Garlic
  • 4 Tablespoons Extra Virgin Olive Oil
  • _____
  • FOR THE PASTA:
  • 6 ounces, weight Linguini
  • 8 spears Asparagus
  • 6 whole Mushrooms, Sliced
  • 4 cloves Chopped Garlic
  • 1 Tablespoon Crushed Red Pepper
  • ¼ cups Hot Water
  • 2 Tablespoons Butter
  • ¼ Tablespoons Salt

Preparation

1. Drizzle olive oil over salmon fillets. Spread crushed garlic over salmon fillets. Bake at 350 degrees for about 15-20 minutes.

2. Cook linguini as directed on the box.

3. Cut woody ends off asparagus, and cut asparagus into 1/2 to 1 inch pieces.

4. Slice mushrooms.

5. In a skillet, saute the chopped garlic and crushed red pepper in olive oil for 2 minutes.

6. Add the hot water and the asparagus and mushrooms and sauté for about 5 more minutes, or until asparagus and mushrooms are tender.

7. Season with a small amount of salt.

8. Add the butter and let it melt.

9. Add linguini and diced salmon.

10. Add a dash of pepper.

11. Toss and serve.

12. Die happy.
