Description

A delicious, economical meal that comes together in minutes and slow roasts all day in a slow cooker.

Ingredients

  • FOR THE CHICKEN:
  • 4 pounds Chicken Drumsticks (4 Pounds Should Be About 12)
  • ¼ teaspoons Kosher Salt
  • ¼ teaspoons Black Pepper
  • FOR THE SAUCE:
  • 1 cup Root Beer (Regular Please, NOT Diet!)
  • 1 cup Ketchup
  • ¼ cups Fresh Lemon Juice
  • 2 Tablespoons Worcestershire Sauce
  • ¼ cups Freshly Minced Onion
  • 1 Tablespoon Ginger Root, Peeled And Minced
  • 1 clove Garlic, Peeled And Minced
  • OPTIONAL FOR SERVING:
  • Toasted Sesame Seeds, To Taste
  • Freshly Chopped Parsley, To Taste

Preparation

1. Spray the inside of the crock of a medium sized slow cooker; set aside.
2. Remove the skin from the chicken drumsticks.
3. Sprinkle the chicken with salt and pepper, and then place them in the prepared crock.
4. Put the root beer, ketchup, lemon juice, Worcestershire sauce, onion, ginger root, and garlic into a medium bowl. Whisk to combine.
5. Pour the sauce over the chicken, turning drumsticks to coat if necessary.
6. Turn the slow cooker on HIGH and cook for 1 hour.
7. Reduce the setting to LOW and continue cooking for 6-7 hours or until chicken is done.
8. Serve chicken with a little sauce spooned over top.
9. Sprinkle with toasted sesame seeds and chopped parsley, if desired.

I must have bungled something badly. At the end of the day, the sauce was all watery and very few pieces of chicken had any sort of flavor other than plain boiled chicken. I may just remove the chicken from the bones and make a chicken salad with the leftovers.
