Description

Forget stopping at a sandwich shop. These easy turkey wraps topped with roasted cherry tomatoes, fresh mozzarella and basil pesto are perfect for a lunch or a weeknight dinner. Serve with a fresh salad and fruit.

Ingredients

  • ½ pounds Cherry Tomatoes
  • ½ Tablespoons Olive Oil
  • 1 pinch Salt And Pepper
  • 2 whole 10" Spinach, Garlic And Pesto Tortilla Wraps (or Similar)
  • 2 Tablespoons Store Bought Or Prepared Basil Pesto
  • 4 ounces, weight Fresh Mozzarella, Cut Into 6 Slices
  • ¼ pounds Good Quality Sliced Deli Turkey Breast

Preparation

Preheat oven to 400 F.

Add tomatoes into a small bowl. Toss with a drizzle of olive oil and a pinch of salt and pepper. Place tomatoes on a small baking sheet and roast for 10-15 minutes until tender. When done, remove them from the oven and set aside.

Put your wraps on a work surface. Spread 1 tablespoon of pesto on each wrap. Top with 3 slices of fresh mozzarella, 1/2 of the turkey and top with 1/2 the roasted tomatoes.

Roll up the wrap bringing sides in to close the ends. Then slice it in half. Continue with remaining wrap.

Serve with a side salad or fresh fruit.
