Lunch for one any day!
Butter one side of each slice of bread. Heat a grill or griddle pan and add one slice of buttered bread (butter side down). Spread evenly with mustard and horseradish, then top with roast beef and cheese. Cover with the other slice of bread butter side up and cook 2–3 minutes. Flip and cook 2–4 minutes to brown and melt cheese.
Wonderful served with a side dish of potato salad or cole slaw and a dill pickle. Perfect lunch for one!
